Biking!

Yes! My new found passion or need. I have been cycling for the last 2-3 weeks now on an average of about 10 miles per day, 5 days a week. I will be honest that I started about a year ago with cycling, but I did not dare to cycle more than a mile in the beginning.

Slowly over the time, I built up the length and now although I can cycle for about 8 miles at a stretch, my speed remains quite average. So hope to increase my speed over the next few months. And hope to look more athletic too!

Will surely post before and after pics - if i don’t end up looking the same :D

Chicken Satay Recipe
Oh yes amazing spring nights call for some hot chicken satay. Super easy to cook, fast cook time and really yummy! I used local peanut dipping sauce to go with it which added cherry to the already amazing dish.
400g chicken filet cut into small cubes to fit a skewer
1 onion
2-3 cloves garlic
1 inch ginger
1 tablespoon lemongrass chilli sauce
4-5 tablespoon terriyaki marinade sauce
1 teaspoon cumin powder
1 teaspoon coriander powder
Crushed pepper
2 tsp red chilli powder
Steps
1. Take all the ingredients except for chicken and grind them well to a paste.
2. Marinate the chicken pieces for at-least 2 hours and upto 24 hours.
3. Add pieces to skewers and set them in a preheated oven (250 deg Celcius).
4. It takes about 5 minutes each side, and yes you are ready to go!
5. Serve hot.

Hi!

A big hello to everyone out there!

Almost a year has passed by since the last time I was here. New land, new culture, new language, new life and new learnings.

I am a year older and hopefully wiser too. Looking forward to a simpler life and more importantly achieving some of my dreams. A well deserved break now seems a little bit too long, makes me a bit uncomfortable too.

Will try to squeeze time among my Dutch classes, studying for exams, reading books for inspirations and life as usual to come down and keep posting some nice and sparkly things i come across.
